Instructions
1. Prepare the mushrooms
Gently tear the oyster mushrooms into smaller, bite-sized clusters. Keeping some of the clusters intact gives them that satisfying, meaty texture.
2. Make the dipping mixture
Combine the plant-based milk and hot sauce in a shallow bowl.
In a separate bowl, mix the flour, cornmeal, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.
3. Coat the mushrooms
Dip each mushroom cluster into the milk mixture, then generously coat with the seasoned flour mixture.
4. Crisp them up
Heat oil in a skillet over medium-high heat. Fry the mushrooms in batches until golden and crispy, about 2 to 3 minutes per side. Transfer to a paper towel-lined plate.
For an air-fryer option, spray the coated mushrooms lightly with oil and air fry at 400°F for about 10 to 12 minutes, turning halfway through.
5. Make the remoulade
Mix the vegan mayonnaise, Dijon mustard, relish, hot sauce, Cajun seasoning, garlic powder, and lemon juice until smooth.
