Vegan Cajun Oyster Mushroom & Sweet Potato Bowls
A hearty, colorful bowl packed with roasted sweet potatoes, savory Cajun-seasoned oyster mushrooms, black beans, and fresh microgreens. It’s naturally vegan, nutrient-dense, and full of Louisiana-inspired flavor.
Ingredients
For the bowl:

2 medium sweet potatoes, peeled and cubed

8 oz fresh gourmet oyster mushrooms, torn into bite-sized pieces

1 cup cooked black beans, drained and rinsed

2 cups fresh microgreens

1/2 red bell pepper, diced

1/4 red onion, diced

2 tbsp olive oil

1 tsp Cajun seasoning

1/2 tsp smoked paprika

For the creamy avocado-lime drizzle:

1 ripe avocado

2 tbsp fresh lime juice

2 tbsp water
-
1 small garlic clove

1 tbsp fresh cilantro

Instructions

Roast the sweet potatoes:
Preheat oven to 425°F. Toss the cubed sweet potatoes with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25 to 30 minutes, flipping halfway through. -
Prepare the oyster mushrooms:
Toss the oyster mushrooms with the remaining olive oil and Cajun seasoning. Spread them on a separate baking sheet and roast for 15 to 20 minutes, until tender and lightly browned around the edges. -
Warm the beans:
Add the black beans and diced bell pepper to a skillet over medium heat. Cook for 3 to 5 minutes, just until warmed through. -
Make the avocado drizzle:
Blend the avocado, lime juice, water, garlic, cilantro, and a pinch of salt until smooth and creamy. Add a little more water if needed. -
Build your bowls:
Layer roasted sweet potatoes, Cajun oyster mushrooms, black beans, and peppers in bowls. Top generously with fresh microgreens. -
Finish and serve:
Drizzle with the creamy avocado-lime sauce and serve immediately.
