Instructions
1. Prepare the Peppers
Preheat the oven to 400°F.
Cut the tops from the bell peppers and remove the seeds and membranes.
Place the peppers upright in a baking dish and set aside.
2. Cook the Mushrooms
Heat olive oil in a large skillet over medium-high heat.
Add the chopped oyster mushrooms and cook for 6–8 minutes until they become golden brown and slightly crispy.
Add the diced onion and bell pepper. Cook for another 4–5 minutes until softened.
