Louisiana Blackened Chicken & Gourmet Oyster Mushroom Dirty Rice

Louisiana Blackened Chicken & Gourmet Oyster Mushroom Dirty Rice

This hearty Louisiana-inspired recipe combines blackened chicken, savory gourmet oyster mushrooms, and dirty rice flavors with fresh microgreens from Chris & Camille's Family Farm. It's a one-skillet meal that delivers bold Cajun flavor while showcasing farm-fresh ingredients.

Why This Recipe Works

Oyster mushrooms naturally absorb the rich Cajun seasonings and provide a meaty texture that pairs perfectly with blackened chicken. The addition of microgreens brightens the dish and adds a fresh contrast to the deep Louisiana flavors.

CCFF Ingredients

  • Gourmet Oyster Mushrooms
  • Spicy Microgreens Blend
  • Green Onion Microgreens (optional)

Protein

  • 1½ lbs boneless skinless chicken thighs

Additional Ingredients

  • 2 cups cooked long-grain rice (preferably day-old)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 5 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp Tony Chachere's Original Creole Seasoning
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp paprika
  • Salt to taste
  • ¼ cup chicken broth

Instructions

1. Blacken the Chicken

Season chicken thighs generously with:

  • Tony Chachere's
  • Black pepper
  • Garlic powder
  • Oregano
  • Paprika

Heat a cast-iron skillet over medium-high heat.

Add olive oil and cook chicken 5–6 minutes per side until deeply browned and cooked through.

Remove and set aside.

2. Build the Trinity

Reduce heat to medium.

Add butter, onion, bell pepper, and celery.

Cook for 5 minutes until softened.

Add garlic and cook another minute.

3. Cook the Mushrooms

Add oyster mushrooms and sauté until golden brown and slightly crispy around the edges.

The mushrooms will absorb the butter and seasonings while developing a rich, almost smoky flavor.

4. Make the Dirty Rice

Add cooked rice and chicken broth.

Mix thoroughly, allowing the rice to absorb all the flavors from the skillet.

Slice the chicken and return it to the pan.

Cook for another 2–3 minutes.

5. Finish Farm Fresh

Top generously with Spicy Microgreens and Green Onion Microgreens immediately before serving.

Serving Suggestions

Serve with:

  • Cornbread

  • Louisiana hot sauce on the side

Nutrition Spotlight
