Creamy Lime Sauce

½ avocado

Juice of 1 lime

2 tbsp water

1 tbsp fresh cilantro

¼ tsp Cajun seasoning
Instructions

Season the mushrooms: Toss the oyster mushrooms with olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.

Crisp the mushrooms: Heat a skillet over medium-high heat. Cook the mushrooms for 6–8 minutes, stirring occasionally, until golden brown and crispy around the edges.

Sauté the vegetables: In the same skillet, add the bell pepper and red onion. Cook for 3–4 minutes until slightly softened but still colorful.

Make the sauce: Blend the avocado, lime juice, water, cilantro, salt, and Cajun seasoning until smooth.

Build your bowls: Add rice to each bowl, followed by black beans, sautéed vegetables, cherry tomatoes, and crispy oyster mushrooms.
