Ingredients

For the pasta

  • 12 oz pasta of choice

  • 1 lb gourmet mushrooms, sliced or torn

  • 4 cloves garlic, minced

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 cup heavy cream

  • ¾ cup grated parmesan cheese

  • ½ tsp cracked black pepper

  • Salt to taste

  • ½ tsp Italian seasoning

  • ¼ tsp red pepper flakes (optional)

For finishing

  • Extra parmesan cheese

  • Fresh parsley

Instructions

1. Cook the pasta

Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve ½ cup pasta water before draining.

2. Sauté the mushrooms

Heat butter and olive oil in a large skillet over medium-high heat. Add mushrooms and cook until golden brown and caramelized, about 7–8 minutes.

3. Add garlic and seasoning

Stir in garlic, Italian seasoning, black pepper, and red pepper flakes. Cook for 1 minute until fragrant.

4. Make the sauce

Reduce heat to medium-low. Pour in heavy cream and stir until warmed through. Add parmesan cheese and mix until smooth and creamy.

5. Combine everything

Add cooked pasta to the skillet and toss to coat evenly. Use reserved pasta water as needed to loosen the sauce.

6. Finish and serve

Top with sunflower microgreens, parsley, extra parmesan, and fresh lemon zest before serving.
