Louisiana Garlic Herb Shrimp & Gourmet Oyster Mushroom Skillet with Cajun Microgreen Finish

A true Louisiana-style skillet meal built around Gulf shrimp, bold Cajun flavors, and farm-fresh ingredients from Chris & Camille's Family Farm. This recipe combines the richness of sautéed shrimp and oyster mushrooms with the flavors you already love—garlic, black pepper, oregano, and a touch of Old Bay—finished with fresh Cajun Spicy Microgreens for a vibrant Louisiana twist. Chris & Camille's Family Farm offers fresh oyster mushrooms and Cajun Spicy Microgreens that make this dish stand out.

Why You'll Love It

Louisiana cooking is all about building layers of flavor. The mushrooms soak up the garlic butter, the shrimp bring sweet Gulf seafood flavor, and the microgreens add a fresh Cajun kick right before serving.

CCFF Ingredients

  • Oyster Mushrooms
  • Cajun Spicy Microgreens Blend

Additional Ingredients

  • 1 lb large Gulf shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 5 cloves garlic, minced
  • 1 tsp Old Bay seasoning
  • 1 tsp Tony Chachere's Original Creole Seasoning
  • ½ tsp coarse black pepper
  • ½ tsp dried oregano
  • Juice of ½ lemon
  • 2 green onions, sliced
  • Salt to taste

Instructions

1. Season the Shrimp

In a bowl, toss shrimp with:

  • Old Bay
  • Tony Chachere's
  • Black pepper
  • Oregano

Let rest for 10 minutes while preparing the mushrooms.

2. Sauté the Mushrooms

Heat olive oil and 1 tablespoon butter in a large cast-iron skillet over medium-high heat.

Add oyster mushrooms and cook for 5–6 minutes until golden brown and slightly crisp around the edges.

Remove and set aside.

3. Cook the Shrimp

Add remaining butter to the skillet.

Add garlic and cook for 30 seconds until fragrant.

Add shrimp and cook 2–3 minutes per side until pink and lightly caramelized.

4. Bring It Together

Return mushrooms to the skillet.

Add lemon juice and green onions.

Toss everything together and cook for another minute.

Taste and adjust seasoning if needed.

5. Finish Louisiana Style

Remove from heat and top generously with fresh Cajun Spicy Microgreens.

The heat from the skillet slightly softens the microgreens while preserving their flavor and texture.

Serving Suggestions

Serve with:

  • Dirty rice
  • Creamy stone-ground grits
  • Crusty French bread
  • Roasted potatoes
  • A simple romaine salad

Farm Fresh Tip

For extra Louisiana flavor, stir 1 tablespoon of finely diced bell pepper and onion into the skillet when sautéing the mushrooms. The vegetables create a quick "trinity-inspired" base that pairs perfectly with the shrimp and microgreens.

From the Farm to Your Table

Fresh oyster mushrooms provide a rich, savory texture while the Cajun Spicy Microgreens add a peppery finish that complements seafood beautifully. Together they transform a simple shrimp skillet into a meal that tastes like it came straight from a Louisiana farm kitchen.
