The Concept
Maque choux is a traditional Louisiana corn-based sautéed dish, typically built on the “holy trinity” and finished with cream or stock. Here, we elevate it into a full entrée by adding Gulf shrimp and oyster mushrooms, then brighten it with fresh microgreens for contrast and texture.
Ingredients
From the farm:
- Oyster mushrooms (sliced or torn)
- Broccoli microgreens (finish)
- Radish microgreens (heat and contrast)
- Fresh herbs (parsley, chives if available)
Seafood:
- Gulf shrimp (peeled and deveined)
Base:
- Sweet corn (fresh or frozen, preferably local)
- Onion, bell pepper, celery
- Garlic
- Butter
- Olive oil
- Cajun seasoning
- Smoked paprika
- Chicken or seafood stock
- Heavy cream (optional for richness)
Step 1: Build the Flavor Base
In a hot skillet, sauté onion, bell pepper, and celery in butter until softened. Add garlic and cook briefly until fragrant.
This creates the foundation of sweetness and depth typical of Louisiana cooking.
Step 2: Add Corn and Mushrooms
Stir in sweet corn and oyster mushrooms. Let them sauté until the mushrooms begin to brown slightly and the corn develops a light caramelization.
The mushrooms add a savory “meaty” depth that balances the sweetness of the corn.
Step 3: Create the Maque Choux Sauce
