The Concept

Ingredients

For the skillet

  • 1 lb oyster mushrooms, torn into large pieces

  • 3 cups fresh sweet corn kernels

  • 1 small yellow onion, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 3 cloves garlic, minced

  • 2 tbsp butter or olive oil

  • 1 tsp Cajun seasoning

  • ½ tsp smoked paprika

  • Salt and cracked black pepper to taste

  • ¼ cup heavy cream or coconut cream

  • 1 tsp hot sauce (optional)

For finishing

  • Fresh garlic microgreens from Chris & Camille’s Family Farm

  • Chopped green onions

  • Fresh parsley

  • Lemon wedges

 


 

Instructions

1. Sauté the vegetables

Heat butter or olive oil in a large skillet over medium-high heat. Add onions and bell peppers and cook for 4–5 minutes until softened.

2. Cook the mushrooms

Add oyster mushrooms and cook until browned and slightly crispy around the edges, about 6–8 minutes. Stir occasionally to develop color without overcrowding the pan.

3. Build the flavor

Add garlic, Cajun seasoning, smoked paprika, salt, and black pepper. Stir for 1 minute until fragrant.

4. Add the corn

Fold in the sweet corn and cook another 4–5 minutes until tender and lightly caramelized.

5. Finish the skillet

Pour in the cream and hot sauce if using. Simmer for 2–3 minutes until slightly thickened and glossy.

6. Garnish and serve

Remove from heat and top generously with garlic microgreens, green onions, parsley, and a squeeze of lemon.

Serve warm with toasted French bread, over rice, or as a side to your favorite grilled protein.
